# How-To Steps:

01 - Rinse sushi rice under cold water until water runs clear. Combine rice and water in a medium saucepan, bring to a boil, then cover and simmer on low heat for 15 minutes. Remove from heat and let steam covered for 10 minutes. Stir in rice vinegar, sugar, and salt, then let cool slightly.
02 - Whisk soy sauce, sesame oil, rice vinegar, honey, grated ginger, and sesame seeds in a bowl. Add diced fish and toss gently to coat. Refrigerate and marinate for 10 to 15 minutes.
03 - Slice avocado, cucumber, radishes, and spring onions. Julienne carrots. Ensure edamame beans are cooked and shelled. Prepare nori strips and optional microgreens.
04 - Distribute rice evenly into four bowls. Arrange marinated fish, avocado, cucumber, carrots, edamame, radishes, and spring onions on top. Garnish with nori strips, toasted sesame seeds, and microgreens if using.
05 - Drizzle each bowl with spicy mayo and soy sauce to taste. Optionally add pickled ginger and lime wedges. Serve immediately.

# Top Tips:

01 -
  • It comes together in under an hour and feels infinitely more impressive than the effort suggests.
  • You control every flavor note, so it becomes exactly what you're hungry for in that moment.
  • The combination of silky fish, cool vegetables, and umami-rich sauces is genuinely addictive.
02 -
  • Use only sushi-grade fish from a trusted fishmonger; this isn't the place to guess about food safety.
  • Assemble the bowls as close to serving time as possible, because warm rice and cold toppings create the textural contrast that makes this dish sing.
  • The rice must be slightly cooled before the fish touches it, or the heat will partially cook the fish and change its delicate texture.
03 -
  • Buy your fish as close to serving time as possible and keep it on ice until the last moment for peak freshness and texture.
  • Toast your sesame seeds in a dry pan for about a minute until fragrant; it transforms them from pleasant to essential.
